Very helpful guide for someone who wants to start a healthy, plant based diet.

This is a pretty approachable cookbook: Ella's tone is conversational and she's definitely trying to provide a resource, not proselytizing her dietary choices. I'm not a vegan, but I'm making a switch to a low-histamine diet which calls for (among other things) cutting out gluten and dairy, and cutting down on sugar. I was pleased to see several recipes in here (75% of them, in fact) that intrigue me, and seem doable. While I'll have to hunt to find buckwheat flour and a few other 'odd' ingredients, almost everything else in every listed recipe can be had at the local grocer, and made in an hour or less. Yay! I'm especially interested in the buckwheat and quinoa recipes, and the sweet "baked" goods recipes. I recommend this to anyone seeking inspiration for plant-forward, gluten- & dairy-free, unprocessed-food recipes.
