As “The Galloping Gourmet,” Graham Kerr (pronounced “care”) and his beloved wife Treena ate at the world’s best restaurants (195 a year), circling the globe 28 times for their TV shows, with an audience of over 200 million. After becoming Christians, and Treena’s health crises, Kerr has focused on creating healthy gourmet recipes, and using savings from healthier eating to help others. This, their second book together, is a compendium of practical tips and recipes for both new and experienced cooks. Each well-written recipe includes technique details, but most also have a simple “At a Glance” summary for skilled cooks. A friendly note is given for each recipe--(why would someone want to make this, and other info about the recipe itself). Categories include “Breakfast/Brunch, Lunch and Supper, Vegetables, Seafood, Poultry, Meats, and Stocks,” Most of the over 100 recipes included are gourmet: Baked Salmon in a Jacket, Pork Tenderloin with Red Wine Sauce, Pacific Paella, Roasted Vegetable Lasagna. But Kerr also explains how to soft-boil an egg, roast a young chicken (to try with red currant jelly,) and make mashed sweet potatoes and basic vegetable stock. Has numerous helps including buying tips (like making expensive dried wild mushrooms more affordable by powdering them to add to other mushrooms), culinary techniques (velvet sauces, etc), home safety food poisoning prevention charts, fruit charts and good combos, equipment tips, and Graham’s food preference sheets. This is not a cookbook of home-style comfort foods using few ingredients, made speedily, and full of photos. Maybe the Kerrs will do that someday. Photos would make this cookbook heavy and expensive: This is an approximately 260-page gourmet cookbook jam-packed with cooking ideas, hints, and tips, and most cooks could find something here of value. Kerr, once declared by a weight-loss organization to be the most dangerous man in the world to those wanting to lose weight, has since turned his attention to healthy and delicious living. Recipes include Treena’s dressing, which is an olive oil-and-vinegar for salads made with garlic, ginger and honey; also pan-glazed ribs (no grill needed), and recipes with international flair including Basque, Philippine, Italian, Indian and Irish dishes, among others. For cooks who can cope with few photos, the “Day-by-Day Gourmet” is a treasury of ideas.
